Probiotic Hack

A Probiotic Hack for those who don’t make their own yogurts or kefir.

Almost all commercially bought brands of yogurt, kefir and the such only fermented for under 8hrs. It is far more cost effective and profitable to ferment for a shorter period than the superior 24-36 hours required for cultures to flourish.

A second and just as important reason is that fermenting for 8 hours keeps the product sweeter since excess sugars remain intact, rather than being consumed by the cultures for the additional time, leaving a more bitter, sour flavor.

I only use this method when traveling and purchase commercial yogurt or kefir. I simply add probiotic powder or break open a capsule into the container. I shake the container (unless I have a sanitized spoon available to stir) and leave it out overnight so probiotics ferment at least 12hrs, plus reduces sugar, leaving a more sour and richer probiotic product.

You always try a shorter period like do it in the morning to have at lunch or lunch for dinner until you feel more comfortable.

Lastly if your mixture becomes discolored, has a rotten smell, it is possible your product is spoiled or contaminated. When it doubt, throw it out.
